This summer I’ve been guilty of overusing the same recipe for many different pies. The only thing that was different about them was the filling, I’ve made them with various combinations berries and each time they tasted pretty good!

So that’s why I think this pie lets your imagination run wild, because you can use any combination of fruit or berries that you’d like! Also, I want to mention that I’m using this recipe from Julia’s Album blog.
And now it’s time for the code recipe! Again, these are not real HTML and CSS, they just pretend to be. But I find it fun to create these recipes because coding is a way of thinking, right? The main difference is that in these recipes I write code not for computers, but for humans 😉
Let-your-imagination-run-wild Berry Pie
So here’s the recipe using words:
For the crust
- 1 1/2 cups of flour
- 1/4 cup of sugar
- a pinch of salt
- 10 tbsp of unsalted butter
- 2 egg yolks
- 1 tbsp heavy cream
- 1/2 tsp vanilla extract
For the filling
- 1 cup of berries
- 1/4 cup water
- 2 tbsp of cornstarch
- 2 tbsp of water
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1/2 cup of sugar
- 2 1/2 cups berries
- + berries for decoration
Crust. In a large bowl combine flour, sugar and salt, making sure that all of the ingredients are mixed well. Add butter bit by bit, using a hand mixer to ensure that it gets evenly spread.
Once all of the butter is incorporated, mix all the liquid ingredients (egg yolks, heavy cream and vanilla extract) and pour them into the flour/sugar/butter mixture. Combine well and take the dough out of the bowl (you can play with it a little).
Spread the dough across a greased tart pan, making sure that it’s even and there are no holes. Bake at 200 degrees C or 400 fahrenheit for around 15-20 mins or until you notice it getting golden/light brown. Just make sure it doesn’t burn!
Once it’s ready, take it out and let it cool, you will need it roughly room temperature for the the next and the most exciting stage.
Filling. Cut all of the berries to your desired size/shape. Put 1 cup of berries and 1/4 cup of water into a small sauce pan and bring them to boil. As soon as the water starts boiling, turn the heat down to medium/low and simmer the berries for 5-10 mins until they become soft and the water becomes the colour of the berries.
Once you’ve reached that point, add cornstarch with water (mix them together before adding), lemon juice, lemon zest and sugar. Continue cooking this mixture for another 5-10 minutes, stirring regularly, until the liquid starts to thicken.
When that happens, add around 2 1/2 cups of berries, mix them in and remove the pan from heat. Pour the berry filling into the pie crust and decorate with fresh berries. Let the pie cool and settle. Serve and enjoy 🙂
